Cooking Demo: Chicken Fried Rice

Ingredients

  • Chicken: Leftover rotisserie chicken or rotisserie chicken from a supermarket.
  • Egg
  • Scallions
  • Frozen Peas
  • Rice: Day-old rice, preferably with teriyaki sauce (optional).

Preparation Tips

  • Rice:
    • Use freshly cooked rice or rice that has been refrigerated overnight for best results.
    • Avoid using rice that is about 45 minutes old as it tends to stick together and become mushy.
    • A trick by Wang Gang: Add a little cornstarch to the rice and break it up by hand to keep grains separated.

Cooking Steps

  1. Prepare the Wok:

    • Rub a thin film of oil into the wok as a temperature gauge.
    • Heat until the oil is smoking hot; then add the rest of the oil.
  2. Cook the Egg:

    • Heat wok until smoking, add oil.
    • Add egg with a pinch of salt, a touch of MSG, and white pepper.
    • Once cooked, remove the egg from the wok.
  3. Cook the Rice:

    • Reheat the wok until smoking hot, then add oil.
    • Add rice and stir fry, using additional tools like a torch for smoky flavor if desired.
  4. Add Vegetables and Chicken:

    • Add scallions and chopped chicken to the wok.
    • Stir in frozen peas (no need to defrost).
    • For additional vegetables like carrots, chilies, onions, or celery, pre-stir fry them and add them back in with the rice.
  5. Seasoning:

    • Add salt and a dash of soy sauce around the side of the pan.
    • Add MSG and white pepper.
    • Return the cooked egg to the wok, breaking it up and mixing it in.
