Introduction

Spice Blend

  • Ingredients:
    • Coriander seeds
    • Cumin seeds

  • Method:

  3. Carrots, Potatoes, Cauliflower

    • Add 3 tablespoons of oil to the pot.

    • Add cauliflower with salt and turmeric, cook for 5 minutes.
    • Remove from pot.

Aromatics and Sauce

  • Add cumin seeds to remaining oil and fry briefly.

  • Add water, turmeric and chili powder.
  • Add grated ginger and garlic (or paste), fry for 2 minutes.
  • Add crushed tomatoes, cook until thick consistency forms.

Combine

  1. Re-add Vegetables

    • Return cooked carrots, potatoes, and cauliflower to the pot.
    • Mix with tomato paste.
    • Add salt and ¾ cup of hot water, simmer for 8-10 minutes.
  2. Final Ingredients

    • Add frozen green beans (or fresh earlier).
    • Add aromatic spice blend, garam masala, and crushed kasuri methi.
    • Adjust seasoning with salt and optional sugar.
    • Add a bit more water if dry.
  3. Cream Finish

    • Add 4 tablespoons of cooking cream.
    • Include the reserved broccoli.
    • Vegan option: Use coconut cream or plant-based cream.
