How to Make the Ultimate Creamy Potato Soup

Ingredients

  • 6 strips of bacon (cut into bite-sized pieces)
  • 3 tablespoons of butter
  • 1 medium-sized onion (chopped)
  • 3 cloves of garlic (minced)
  • 1/3 cup all-purpose flour
  • Yukon Gold potatoes (peeled and cut into pieces no larger than one inch)
  • 4 cups of chicken broth
  • 2 cups of whole milk
  • 2/3 cup of heavy cream
  • 2/3 cup of sour cream

Spices

  • 1 1/2 teaspoons of salt
  • 1 teaspoon of ground black pepper
  • 1/4 teaspoon of ancho chili powder (or regular chili powder)

Cooking Instructions

Step 1: Preparing the Bacon

  • Use a large pot to cook bacon until crisp over medium heat
  • Remove bacon and set aside on a paper towel-lined plate

Step 2: Cooking Onion and Garlic

  • Add butter and chopped onion to the pot
  • Cook until the onion is translucent (3-5 minutes)
  • Add minced garlic and cook for 30 seconds until fragrant

Step 3: Making the Soup Base

  • Sprinkle flour over onion and garlic mixture
  • Stir until smooth for a creamy base
