When we talk about cereals, we have to remember that they are a type of carbohydrate As we all know, carbohydrates, are essential in our daily diet because, in addition to provide us with energy, they give us the nutrients our body needs and requires. Most people... tend to think that a cereal is "Quaker" or "Nesquik" or a brand. Cereals come from plants. The precise definition is: The set of grains from Gramineae plants. Its structure it's very interesting. A whole grain cereal (not refined) has three parts that can be distinguished. The covering named BARN, is the one that gives us the most fiber, necessary for our intestinal transit Next, we have the ENDOSPERM. Almond accumulates here. It gives us the energy our body needs And finally, the GERM which concentrates the vitamins, minerals, fats... And many more nutrients that the plant needs (as the name implies) to germinate. When a grain has been refined or processed as brands usually sell... has lost the barn and the germ leaving only the endosperm, i.e. a little bit of almond, sugar.. and that's it. So... We can clearly see there's a huge difference between a whole grain and a refined grain. [ Brown rice and White rice ] Whole grains provide us with proteins, fats, vitamins, minerals and fiber necessary for our organism. According to wether or not they have gluten Yeah... that dreaded word. We'll see which cereals have gluten on them and which don't Cereals that contain gluten are the ones we have been probably consuming the most and the most well-known. For example The oatmeal. Actually, oatmeal doesn't have gluten. Nevertheless, it can be easily contaminated. Plus, it has a similar protein called "prolamine". Then we have barley. Rye, very used in Europe. And wheat. And all its derivatives such as cookies, spaghetti, etc. Instead, cereals without gluten are less known, maybe even more expensive? but, very important. Let's start with rice in all its presentations: black, red, white, brown, etc. Amaranth. Cañihua (kaniwa). Sorghum. Teff Corn. In all its derivatives. Quinoa. Millet. And the only type of wheat that doesn't have gluten... buckwheat! To summarize. Cereals are an important part of our diet. Everyday, we should consume at least 3 types of whole grains.
