Ingredients

Popcorn Chicken

  • 800g chicken breast

  • 1 tbsp black pepper
  • 20ml soy sauce
  • 1 egg
  • 40g cornflour/cornstarch

Korean Glaze

  • 60ml soy sauce
  • 80ml water
  • 2 tbsp low cal ketchup
    • Brand suggested: Heinz 50% less
  • 3 tbsp gochujang paste
    • Availability: Found in most supermarkets
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 30g brown stevia
    • Brand suggested: Pure Via

Sweet Sticky Rice

  • 200g uncooked sticky rice
    • Brand suggested: Tesco
  • 3 tbsp rice vinegar
  • 1 tbsp sweetener
  • Salt to taste

Garnishes

  • Chopped green onions (green parts)
  • Sesame seeds

Cooking Instructions

Popcorn Chicken

  • Airfryer: 200°C for 10-12 minutes
  • Oven Bake: 220°C for 15-18 minutes
    • Note: Video may contain a typo in timings

Sweet Sticky Rice

  • Cook rice according to package instructions
  • Allow to cool for 10 minutes
  • Mix with 3 tbsp rice vinegar, 1 tbsp sweetener, and salt to taste

Storage & Reheating

  • Storage: Keep in the fridge for up to 5 days
  • Reheating:
    • Add a tsp of water
    • Microwave for 3 minutes, partially covered
    • Mix well before serving
