Matt Winton's Winning Coffee Brewing Recipe

V60 Dripper

Required Equipment

  • Paper Filters: Zero 1 or Zero 2 size

Grinding the Coffee

Preparing the Filter and Dripper

  • Fold and insert the paper filter into the V60.
  • Rinse the filter with water (hot for porcelain, any temperature for metal/plastic).
  • Discard the water used for rinsing.

Brewing Process - The Five Pour Method

  • Ratio: 1 to 15 (Coffee to Water)
  • Total Recipe: 20 grams coffee to 300 ml water
  • Division: Five pours of 60 grams each.

Pouring Steps

  1. First Pour: 60 grams of water. Pour in the center, then around the coffee. Wait 30 seconds.
  2. Second Pour: Pour up to 120 grams. Start in the center, then around the sides.
  3. Third Pour: Pour up to 180 grams. Maintain the same technique.
  4. Fourth Pour: Pour up to 240 grams. Keep consistency.
  5. Final Pour: Pour up to 300 grams. Total water weight reaches 300 grams.

Adjustments

  • If brew takes too long (tastes dry or bitter): Make grind coarser.
  • If brew is too fast (tastes hollow or sharp): Make grind finer.

Finishing Up

  • Brew time target: ~3 minutes 30 seconds.
  • Aroma Check: Inhale the aromas before drinking for full experience.
  • Taste: Expect floral notes from washed Ethiopian coffee.
