Keto Cottage Pie Recipe and Tips

Oh, it's hot. It's real hot, guys. Ooh, tasty though. But hot. Hey guys, Dave here back in the kitchen and I'm ready for some lunch. So, today we're going to be making cottage pie, keto cottage pie, keto shephardd's pie, whatever you want to call it. We're making another Irish dish. We recently did soda bread. You guys liked it. A lot of you requested coal cannon and like a shephardd's pie or a cottage pie. Now, Cole cannon maybe we'll do in the future. I looked it up. I had never heard of it. It seems interesting and we could probably make it happen, but I was feeling like something a little bit more hearty. So, we're going to try the cottage pie. I My dad called it a shephardd's pie growing up, but apparently it's called cottage pie if you use beef, shepherd's pie if you use lamb. Lamb sounds like scary to me, like it's going to be too gy. Even though I like girros gyros, uh I still was a little nervous, so I went with ground beef instead. So, to start it off, and I didn't set up a camera for this now that I think about it. I guess I could go get one and set it up. I got to cook some ground beef. Or we could be lazy and just show you the before and after. Like, hey, this is uncooked ground beef and now it's cooked ground beef. Although, I bet there's more stuff that needs to go into it. So, I probably should just do it right and set up a camera. I'm the only content creator who's going to sit here and try to talk himself out of using cameras. But, hey, you know what? That's that's relatable, right? We all try to find the quickest and easiest path. So, here's some ground beef. That's what it looks like if you've never seen it. It was dripping in my fridge, which is nasty. I got to go clean that up. But let's cook this up. All right. I don't know if you're proud of me, guys, but you should be. Look, I set up the camera. Doesn't it look beautiful? Ground beef. Turn on the stove. Let's get it cooking. Okay, so while that does its thing over there, you can kind of see it in the corner of this camera, too. Look at that multicam. I will say I'm a realist. My Irish soda bread video did really good. A lot of you guys clicked it. But I'm not so delusional to think that it's the it's the Irish side of it that made you click, what is this weird chunk in here? I don't want to eat that. I think in fact what probably piqu your interest was the word bread and keto in one sentence because you know how it is that keto life you get the bread cravings. And I will say I've been doing um intermittent fasting lately. That's been it's always been one of my favorite like diets. Uh while this beef cooks up, you want to you know dice up a half an onion. It actually says half a small onion. So, you know, maybe we'll cut a little extra off. Uh, and if you combine intermittent fasting with keto, then you really see the pounds start to fall off. It added like 10 years to me because I've been out of shape for a while. And uh since I got it, I've lost about 7 8 lb, maybe 9 lb. But I'm hopeful that by next month at this time, we can check in again and I'll have lost even more. I'm trying to get very serious about this. And this is helping me get there. All right, we're back from that. I haven't recorded it yet, so I don't know what I said, but I I bet it was great. I bet I did a great job. Did I do a great job on that? So, we're slicing up this onion and uh we're going to like I said, I I think maybe there's not a massive interest in Irish foods, but I personally love Irish food and so I wanted to do this for me because I'm intermittent fasting right now and I want to end my fast with this. So, this will be the first thing I eat since yesterday. I like to do the 24 fast, 20 hours fasting, 4 hours eating. And uh I was like, man, I really would love to have some shepherd's pie or cottage pie, whatever you call it, after my fast. And so I've been tying my videos in with like my eating window, which I think is uh you know, a pretty good idea. So, we got our onions diced up. That's a lot of onion, maybe too much. Let's check on our beef here. It's cooking pretty good. I do like this pan. They sponsored me a while back. So, uh you know, go find that. I made dumplings, keto pizza dumplings. They were pretty good, actually. Now, I think I did 9010 ground beef. There's actually a decent amount of grease in this for uh such a lean beef, but that's all right. I'm going to have to drain a little bit of it. You want two cloves of garlic. We'll just we'll dice it up the oldfashioned way with a knife cuz that's going to go into the beef as well in just a moment. All right, so our grease kind of just disappeared on its own. So, that's cool. I guess I don't need to strain it anymore. Let's add in our onions and our garlic like so. And mix those in. And we just want to cook the onions and garlic till fragrant. Like 2 to 3 minutes probably. All right. So now I'm going to add like 2 tablespoons. I'm going to turn my heat down a little bit. 2 tablespoon of tomato paste, which is going to be hard to do since I can only find my half tablespoon. So I'm just going to get it all over my fingers. There's one. One and a half. And then a little bit more to get to two. There's like some carbs in tomatoes, so you got to be careful with that. I don't want that to burn. So, we're going to quickly add half a cup of beef broth. Now, I'm using a one cup uh because I can't find my half a cup cuz it's just Dave. That's just how I roll. Let's mix that all up here. That should uh settle down the sizzle a little bit. I know the sizzle was probably pretty intense on your end. Uh rip ears. Is that what they say? That's what the kids say. They say rip ear. They say a lot of stuff. They say bed rot. Apparently, that's a trend this summer. It's just like the kids don't get out of bed. The teenagers, they just stay in bed all day and don't do anything. We then want to put half a teaspoon of thyme, dried thyme in here. You got some time for some time. I always make a stupid dad pun about time. I don't know why. I can't help it. Half a teaspoon of onion onion powder. And then a full teaspoon, a little more of one. And this is half a teaspoon. So I'm doing it twice. And let's mix that up. It smells delicious, guys. It smells delicious. I'm liking what I smell. I am also incredibly hungry. So, pretty much everything probably would smell delicious to me right now. This smells extra delicious. A tasty treat, as it were. Now, we're going to add a little bit of salt and pepper to taste. Salt, pepper, and stir that up with our spatula. The thyme gives it a really nice smell. I think that's a big part of the smell. So, we're going to simmer this for like 5 to 7 minutes to let those flavors all meld together. And then we're going to prep an 8x8 baking dish, like a glass brownie dish basically, just with some uh grease. All right. So, while that simmers for 5 to 7 minutes, we need some cauliflower fuettes. Not broccoli fuettes, cauliflower fuettes. And uh I certainly not being a pro at this, am going to see about how to create that. There we go. Looks like a good start, doesn't it? Then we just pull it apart. We just got a head of cauliflower and I'm just trying to like get the gross part out, the stem or whatever, and just be left over with the fuettes. I think I think I either got lucky or it's super easy. One of the two. Yeah, look at that. That was simple as a pimple on an elephant's butt, which I don't know what that means, but it's what I used to say when I was a kid. Let's bring it back. Bringing that one back. There we go. All right, so I think our ground beef has probably simmered long enough. I need to move that camera anyways, probably. So, we'll take this off and put it into our 8x10. Now, you know what? 8x10 is uh 8x10 is paper or 8 1/2 by 11. I don't remember. So, we've got a greased up 8x8. And uh we're just going to put our beef in there as our base level of the cottage pie or shephardd's pie, whatever you want to call it. I'm supposed to like steam the cauliflower. And it says to put it in a bowl. This bowl is a little damaged. Put it in a bowl and then microwave it for 7 minutes. In the bowl with like a lid. I don't have a lid for this, though. All right. So, we basically want to put four tablespoon of water in 3 to four. So, this is 1 and 1/2. Another 1 and 1/2. And I'll have it be a little bit heaping. Then, we cover this. I'm going to try to figure out a way to do it. And throw it in the microwave for 7 minutes. We preheat the oven to 400. I'm just going to use this big Tupperware bowl for this next step. And what we need is cottage cheese. And basically 1 and 1/2 cups worth is going to go into our bowl. And that might be almost this whole container. Let's see. How can I do this properly? Might be more than this whole container, actually. But I think I have more. So, we're all right. Here's another one. Let me get another half a cup. You know, we're we're round about measuring the cottage cheese. Close enough. Build a little too. So, cup and a half of cottage cheese in there. And we're going to use the hack you guys taught me, the immersion blender. I liked the way that worked when we did the Was it the soda bread? Yeah, I think the soda bread we did it. So, we're going to try it with this, too. Or it could have been the salad. I think it was the salad. Oh, gosh. Don't make a mess. That's pretty smooth. Our cottage cheese. We're going to add the cauliflower in a minute. So, we're going to add 2 Tbsp of butter into that. I'm going to soften it a little cuz All right. So, this is pretty much softened. We'll add it in with the cottage cheese that we blendified into this mix. Well, let me blend that up first. Get the butter well integrated. We're now going to add 1/4 cup of grated parm. I'm not really sure if when Chad GPT made this recipe if it meant this kind of grated parm or where I gr it myself, but this seems like it'll work better with the immersion blender. Maybe. We're also going to add a/4 teaspoon of garlic powder and a scotch of salt. And then we're going to mix that all up. This might be one of those things where I'm overdoing it with the immersion blender and it's not what you guys meant. Let me know in the comments. I don't really know if I'm going to be able to do the immersion blender with this cauliflower. Maybe I should do it separate. Let's do it separate. That ain't going to work. All right. So, now I need something to blend up this cauliflower. Maybe that means the cauliflower is not steamed enough. It seems steamed, though. We've always got our trusty old ninja. We're probably going to have to do this in batches. I'm such a mess, guys. I'm sorry that I'm such a mess. I'm sorry that you have to watch, but at the same time, you know what else did you have to do today? Work. Who wants to do that? All right, let's just throw some cauliflower in here and see how this I bet this Ninja is going to do great with it. It's real hot. It's scorching my flesh in an aggressive fashion. All right, let's put that on top. Can y'all see it? Pretty good. Yeah. Okay. Yeah, it seems like it's working. All right. So, after a considerable amount of ninja chopping, we have this texture here, which is reminiscent of mashed potatoes, which, as you know, is kind of a key ingredient to a shephardd's or cottage pie. So, we're going to add that in with our cottage cheese. And we might go at it again with the immersion blender. I don't know. Should we? Well, we might. We might try that. I'm making a mess with this thing. Okay, here we go. Let's plug it in. Give it a little spin. It's flying everywhere. You guys who recommended this, I I'm convinced you did it cuz you knew I'd make a huge mess and it would be funny cuz I sure did make a huge mess. We're now going to spread this evenly over our beef layer. Remember the beef layer from before? You remember? Just kind of dump that over the top of this. Like so. Hey, you know what? It's starting to look like a shephardd's pie, guys. I'm pretty excited. Look at that. I'm not sure if this is completely traditional or not, but it's telling me to take some uh cheddar cheese and just kind of put it on top like this. Let's give it a little bit of a shredding. Head it up and put it on top like that for like a nice little cheesy layer. Little more. Is that enough? Oh, the garbage men are here. Dogs barking again. Every video lately, dogs have been barking. Ever since the 4th of July, they've been barking a lot. I think it was all the fireworks. All right, into the oven. 400°, 20 minutes, and we'll be back to try it. I'll clean up a little in the interim. All right, guys. So, I just set the oven to broil. It's been 20 minutes. We're going to broil for like 2 to three. We're going to bring out the keto cottage cheese pie. Cottage pie. The cottage pie. The shephardd's pie. We're going to bring it out and we're going to try it. Maybe scorch our mouth off. We'll see what happens. Oh, and it's hot. It's hot. It's hot. Here we go, folks. We have our Irish keto cottage pie. Shephardd's pie. Scorching hot, but it looks delicious. It looks like a shephardd's pie. What do you think? I'm a man on the run and I got a I got a thing or two to do today. So, I'm going to see about scorching the face. Scorching my face. Look at that. That is way too hot to eat. Way too hot. But look at that. It looks really good. Maybe if I sit it in the spoon, it'll cool a little faster. Let's give it a minute or two. All right. So, we're going to try this and hopefully not burn ourselves. I will say the memory I have of Shephardd's pie is my dad cooking it. This was like the thing he cooked whenever mom went out of town. He would cook this. And uh so that's kind of my memory of this. So, let's see how it tastes compared to Pop's old recipe. Now, his was not keto. had real mashed potatoes. But I think this cauliflower is going to be a really good substitute. It's still so scorching hot. I don't want to burn the top of my mouth or my tongue cuz then I don't get to enjoy food for a week. So, I'm trying to be a little more careful than I have been in the past. Oh, it's hot. It's real hot, guys. Ooh. Tasty, though. But hot. So, here's my only complaint. It's actually delicious. My only complaint is the cauliflower to meat ratio is a little bit off. I would say maybe I used too big of a head of cauliflower. That That's on me. I might have been better off maybe using half as much. Not half as much, 3/4 as much. The flavors are delicious, though. It literally tastes like cottage pie or shephardd's pie. It literally tastes exactly the same. The cauliflower to me is pretty much indeterminable. There's maybe a minor texture difference from the potatoes, but flavor-wise, it tastes like mashed potatoes on top, but we're keto. Normally, I'd take like 30 more bites, but I got enough to taste it, and I really don't want to burn my tongue. I already feel it. It's a little burnt just from that one bite. So, I got to let it cool down. This is my lunch today, and I'm going to eat a hearty amount of it cuz it's quite tasty. Definitely one of those people won't believe it's keto when you serve it to them. You could probably sneak this in and they'd be like, "Oh, just a normal cottage pie." Now, this is to serve multiple people. This is probably serve six. Family of six would be about what I'd say cuz you big huge chunk each and then maybe something on the side. The whole entire dish has 1,900 calories, 133 grams of fat, 127 protein, and then 32 carbs per serving. That would be 317 calories, 22 grams of fat, 21 grams of protein, and five carbs.
