Green Onions
4 green onions
Cut in the middle to separate white and green parts
White part: Split in half, then cut into 2-inch sections
Green part: Cut into 2-inch sections (use at a different time in cooking)
Garlic and Onion
4 cloves of garlic
Crush with a knife, then finely mince
1 onion
Cut into large strips and separate layers
Beef
Use any cut of beef (cut against the grain)
Slice into average thickness (preference for thinner or thicker slices)
Marinate beef with:
Soy sauce
Dark soy sauce
Oyster sauce
Sugar
A little baking soda
Cornstarch
Add oil and sesame oil after mixing other seasonings
Cooking Process
Preheat Pan
Medium-high heat
Add a little oil
Cook Onions
Add white part of green onion and sliced onion
Stir-fry to eliminate raw taste
Season with a little sugar and salt
Remove from pan once crunchy
Cook Beef
Add more oil if needed
Add beef to hot pan and spread out
Let pan-fry until bottom is slightly browned
Stir to flip beef, add minced garlic
Stir-fry to mix garlic evenly
Cook beef until ~70% done
Add rice wine at the edge of the pan
Wait for aroma and let wine cook off
Final Steps
Add dark soy sauce and oyster sauce
Add a little water (since cornstarch was used in marinade)
Wait for sauce to thicken
Add crushed black pepper
Re-add cooked onions to pan
Stir to mix everything together
