: 500g (1.1 lbs) of your choice (shells used in this recipe)
Garlic
: 6 cloves, minced (grated)
Cheese
: 60g (2.1 oz) Grana Padano or Parmigiano Reggiano (freshly grated)
Butter
: 1 tbsp (14g)
Olive Oil
: 1 tsp (5ml)
Stock
: 80ml (1/3 cup) chicken or vegetable stock
Cream
: 400ml (13.5 fl oz) heavy thickened cream
Seasoning
: Sea salt flakes and cracked black pepper to taste
Spinach
: 120g (4.2 oz) washed baby spinach (optional)
Herbs
: 5g (0.2 oz) flat leaf parsley or basil (optional)
Extra virgin olive oil
: For drizzling on top

Preparing Ingredients
Boil Water
: Place a large saucepan filled with salted water on high heat and bring to a boil.
Mince Garlic
: Grate 6 cloves of garlic into a paste.
Grate Cheese
: Grate 60g of Grana Padano or Parmigiano Reggiano.
Chop Herbs
: Roughly chop parsley or substitute with basil (optional).
Cooking Pasta
Cook Pasta
: Add 500g of pasta to boiling water and cook 1 minute less than package instructions.
Making the Sauce
Prepare Sauce Pan
: In a large pan, add 1 tbsp of butter and 1 tsp of olive oil over high heat.
Sauté Garlic
: Once the butter melts, add minced garlic and sauté for 40 seconds.
Deglaze
: Pour in 80ml of stock and let it boil for about 20 seconds.
Add Cream
: Add 400ml of cream, season with salt and pepper, and bring to a boil.
Simmer
: Reduce heat to low and simmer for 6-7 minutes until thickened.
Add Spinach
: Stir in 120g of spinach until wilted (optional).
Combining Pasta and Sauce
Mix Pasta and Sauce
: Transfer cooked pasta directly into the sauce, stirring to combine. Reserve some pasta water if needed.
Add Cheese
: Mix in grated cheese and let it simmer for an additional 1.5-2 minutes until melted.
Season
: Adjust seasoning with salt and pepper, adding more pepper if desired.

Serve
: Use a bowl to serve pasta, top with extra grated cheese, herbs, cracked pepper, and a drizzle of olive oil.
