Traditional German Sauerkraut Recipe

I will make it in two languages in English and in French SAU Crow today that my it's a German very German meal sour cabbage you would call it and I will do it in my little kitchen because I promised my dentist to give her the recipe so I will show her on a video and for my English friends well this way I will upload it and anybody can download the recipe himself have fun and hopefully everything will work out fine well hello here it starts for bacon for see European in English this is some porock which I marinated in a salt brine I bought some bacon very nice smoked bacon very thick I will cut it in in thick Stripes but if you don't have this any normal bacon cut a bit smaller Stripes will do this is a sort of a ham a castler rip but you can use any ham any kind kind of meat like this any kind of pork instead of the pork hooks will do also this here is uh my battery were out at the last one this one is H we go back to bacon it's just some old Bacon fat I'm using uh I always keep it I don't hate to throw this away uh onion one onion sliced this is uh about 15 to 20 um juniper berries and I crush them just with some metal piece to crush them sort of in half that because I will boil them together with the pork Cooks a bit pre cooking in some water in one liter of water about the same amounts I have here sauerkraut and here is a seven maybe 7 eight um what do you call them uh low PL in English what the heck is this called in English uh bay leaves that's it bay leaves my God I'm slow sometimes uh for spicing lat on in the boyo this will be some boyo cubes and that will be very nice too well those are the two pork coocks which I had over here I will add them with about a liter of water into a pot and let it boil the only thing I add to this will be the two cubes of uh of chicken base you could add already now the be CH and the and the bay leaves but I think I will wait a bit later and add just to the sour gr to uh this will be the liquid I'm using for the sour gr afterwards well here I'm letting very slowly the pork Cooks simmer and uh it will take about I will let it cook about for an hour during this time I have decided to use the bacon I bought the nice big pieces I cut it in quite the a good size I want there to be leftovers when we eat the suot to bite on a piece of bacon will be very nice uh for sausages here is some very famous German Knack worst this smoked sausages really nice smoked sausages and I will add to this some the original sausage of vien s Grand Pap this is the daddy of hot dogs the original hot dogs which was very much changed by Americans tasty tasty can only be it add on the last end of the sh or they will explode and uh explode meaning they will crack and it will not be as tasty when daddy hot dog American so important now we are arrived at the point where you have to wash your sour Crut I took it out of the glass dropped it in here me myself I like to keep the Jew from the sour gr this is the Jew that is left over I like to drink it the choice I like to drink it because it helps for d digestion it clears your system it gives you quite a shut of diarrhea immediately but that is all part of the cleanliness of the system right so um and then I you taste it you taste the sour grout you find out if it's very salty some of them are terribly salty mine I was lucky it was not so salty so I just used like a liter of cold water and P it over to wash it and then I taste again and when it taste quite Bland because don't forget some of the meat we have cooking in there later on we add the salt and spices again so it has to take sort of a little bit plant and it's okay foree s okay we have a few minutes later I'm seeing there's a little bit golden color coming through by the bacon that is perfect I don't want to do too much we adding now the onions the diced onions you realize the onions seem to be probably to you like the in big pieces but with the cooking they will actually completely disappear in the shook afterwards they will actually help to maybe thicken it a little bit although we will thicken it up on the end with the one potato a wrapped potato potato on for just ber ah what the hell D VOA important in short short this is now the end of it I let it boil uh when it starts boiling I will put it down to just slow simmering just slow cooking and I used the an cast iron pot like a touch often they call it and with a lid that is very very good for this because it will keep the heat inside it has little settings here which keep the liquid inside the pot and I will wait now it will take about an hour but maybe 45 minutes after 45 minutes I will check and then we see what's How We Do further well 1 hour is over I let it cook for 1 hour and now I'm trying to put out the meat that was in there and I will now try to thicken it up try I will thicken up with the potato wrapped potato here I peeled two potatoes one I still keep in case I need more I take the well this little wrapper there and I creaded this PO potato down I can hardly see with the sun this is terrible well and now this has to be incorporated into the shot just put it in because the potatoes get it has to be done in the last minute the potatoes get to be dark very quickly losing color so and now that I added this it will thicken up naturally the Su some people use instead here at this point when I see a bay leaf or or I see a pig anyf I take it out because for eating it will only be a pain in the neck anyway the flavor is already in there voila and now it this is fresh potato raw so it has to cook at least 10 more minutes I will put everything back the meat and now I we the add the potatoes now the sausages are in there I will add two sauces of vienas for monst they will take a few minutes and then I will turn it off and put it in a in portion size for them and today I will deliver it it should be still warm when it arrives and I wish you all good bonab and U just to take corre well we have should be very much enough for two maybe three maybe four people depends how much how big eaters they are but I wanted to make sure that then there was enough have a good evening have a wonderful meal
