Helen's Vietnamese Banh Mi Recipe

Hi everyone, it's Helen here. Guess where I am? I'm actually standing in front of a street store selling Banh Mi, the world's famous Vietnamese sandwich. But it's not just any random store. To me, it's a very special one. Standing here really... bring back a lot of fun memories of my high school time. So I used to study right opposite and I remember having her banh mi sandwich every morning before going to school. The high school has now been relocated to another location to make room for a primary school. Anyway she specializes in selling banh mi thit nuong which is sandwich with grilled pork. Come check her out. How long have you been selling here? 22 years 22 years? So she's been staying here and selling this sandwich for 22 years. Can you believe it? It's been really long time since I came back here. I'll sell you a loaf. Thank you! Oh my god! It smells amazing! Look at that! Wow! The grilled pork has a bit of sesame seeds on it. So good! Mmm! Oh my god! hmm coming up next i will show you how to make this amazing sandwich at home with a little twist let's begin so the style of this dish is of course the grilled pork and to make the grilled pork you need to prepare 250 gram of minced pork you can also use sliced pork but try to choose the one with some fat on it so it won't be too dry when you grill for the marinade you're gonna need a tablespoon of minced shallot, half a tablespoon of minced garlic, one tablespoon of fish sauce, half a teaspoon of pepper and about half a tablespoon of sugar. You also need about one tablespoon of caramel sauce or we call Nước Hàng in Vietnamese. If not, you can also use molasses or what I use here is Nước Màu Dừa, which is coconut caramel sauce. It's pretty condensed, so the color is gonna be really vibrant. So we're gonna need to use... use just about a teaspoon of those. For the aroma, I'm gonna add a tablespoon of minced lemongrass and 1 8 teaspoon of five spice powder. Just a little bit goes a long way. You also need one and a half teaspoon of oyster sauce, some stock powder, and a tablespoon of sesame seeds. Just mix everything well and set aside in the refrigerator for about an hour or so. The next item you need to make for this sandwich is of course the delicious Vietnamese mayo. I received so many requests from you guys asking Helen how to make that yellow butter that they used to spread in Vietnamese sandwich. Well, it's actually not butter. It's actually homemade mayo. And this is how you make it. Just separate one egg yolk and then mix with a little bit of salt and pepper and a teaspoon of sugar. Then whisk constantly with a balloon whisk until well combined. And then very slowly add vegetable oil. Just a few drops. drops at a time and continue whisking until you get a thick and creamy sauce for one yolk you're gonna need to add about 100 ml of vegetable oil make sure that you use natural flavor vegetable oil because if you use like sesame oil or olive oil the smell gonna be too strong when it's become thick you can add a few drops of lemon juice or lime juice to loosen it out a little bit that's it so simple right The next item which is also very important in making Vietnamese sandwich is of course the pickled carrot and daikon or do chua. Ms. Huong here doesn't use that but of course you can add this as other kinds of Vietnamese sandwiches. So you need to cut carrot and daikon into strips. You can use a wavy knife to cut into pretty shape. And just toss with about a teaspoon or half a teaspoon of salt. Doesn't matter. Toss well and leave for about 15 minutes. minutes so it will become wilted and release quite some liquid at the bottom so rinse a few times to get rid of the salt and now you can squeeze out the excess water and then toss with some sugar and vinegar just equal amount of them it's ready to serve in an hour you can store this in a jar and put into the fridge it can keep for up to two weeks next cut the cucumber into long slices and cut the pepper into slices on the diagonal now it's time to grill the meat just pinch about a tablespoon amount and then shape nicely in your hands to form a really nice patties and then turn on the grill and grill on both sides until you get that amazing caramelization. Wow, smells gonna be amazing. finally to assemble the sandwich just split all the way through from the top to the bottom on one side of the baguette to open leaving the other still attached then spread a thin layer of the mayo Add some potato Then add the grilled pork and the pickles, some cucumber and the chili slices. And as a finishing touch, just add a few sprigs of cilantro to brighten up everything. Looks so amazing! You can drizzle on some Maggi sauce if you wish.
