Process of Making Edamame Tofu
Step 1: Making Edamame Milk

The milk turns bright green, and hands may get cold from the frozen beans.
Step 2: Settling and Preparing for Coagulation
Let the milk sit for 15 minutes to settle.
Use gypsum (calcium sulfate) as a coagulant for consistent results.
Heat milk to 180°F (82°C) while stirring, ensuring it doesn’t burn.
Step 3: Coagulation Process
Add coagulant slowly when milk reaches target temperature.
After stirring, let it sit for 10-15 minutes; cover to maintain heat.
Goal: Create large curds for better tofu texture.
Challenges Encountered
Small curds formed, which may not hold together well.
Initial draining method was ineffective; switched to cheesecloth and mesh strainer.
Be patient with straining to ensure proper liquid separation.
Use remaining liquid in soups or other recipes for added flavor.
Pressing the Tofu
Use a tofu press for better results; it simplifies the pressing process.
Overnight refrigeration recommended for setting.
Final Outcome
Resulting tofu was delicate and did not hold together as expected.
Flavor: Resembled edamame but not significantly improved.
Conclusion: Not worth the effort compared to natural edamame.
