Guava Chiffon Cake Recipe

Ingredients

  • Sugar

  • Whipped cream

Cake Batter Preparation

  1. Whisking Egg Whites:

    • Use room temperature eggs for better whisking.
    • Whisk egg whites in a stand mixer from lowest to medium speed until frothy.
    • Add cream of tartar and continue whisking.
    • Check for soft or stiff peaks by stopping the mixer and checking the whisk.
    • Gradually add sugar while mixing.
    • Stop when soft peaks form and transfer egg whites to a large bowl.
  2. Combine Dry Ingredients:

    • Whisk cake flour, sugar, baking powder, and salt.
    • Transfer to mixer bowl and add oil, eggs, water, nectar concentrate, and vanilla extract.
    • Mix on medium-low for a minute, then medium-high for 2 minutes.
  3. Combine Batter and Egg Whites:

    • Pour batter into the bowl with egg whites.
    • Fold egg whites into batter gently to maintain air bubbles.

Baking Process

  • Line a 9x13 pan with parchment paper.
  • Pour batter into the pan and bake for 30-35 minutes.
  • Test doneness with a toothpick.

Guava Glaze Preparation

  1. Combine cornstarch and guava concentrate in a sauce pot.
  2. Stir until no lumps remain.
  3. Cook over medium heat until thickened and bubbling.
  4. Cool to room temperature, then chill in the fridge for 20 minutes.

Assembling the Cake

  1. After baking, cool the cake and loosen sides with a butter knife.

  2. Flip the cake onto a platter and remove parchment paper.

  3. Layering:

    • Cut the cake in half and brush the bottom layer with guava concentrate.
    • Spread whipped cream on the bottom half.
    • Add the top layer and frost the entire cake with whipped cream.
  4. Chilling and Glazing:

    • Chill the frosted cake in the fridge for a couple of hours.
    • Stir and apply guava glaze on top without mixing with whipped cream.
    • Chill overnight to set the glaze.
