hey y'all it's just lex and today we're going to be making my delicious chili beans now y'all know i'm from north carolina beans go in chili i'm not from texas or anywhere like that so we have always made our chili beans with beans in them of course let's go ahead and get into it [Music] all right so first you want to go ahead and ground your meat you can use any meat ground beef ground turkey ground chuck whatever you have my grocery store only had one package left of ground turkey so i'm also using a pound of ground beef from the meat counter and then i'm also gonna add some ground turkey before i do that i'm gonna go ahead and break it up just a little so that it's not just a big pile in there so i'm gonna break up my ground beef and then i'll go ahead and add the other pound of ground turkey i like to use two pounds of meat in these chili beans because the more the better now you're just going to break it up and allow it to cook halfway and then we're going to add our peppers i have a green pepper a red pepper and a yellow onion just going to dice that up or chop it up and add it to our meat and allow it to continue to brown if you want to pack it with more veggies feel free to double or triple add as many onions and peppers as you like i prefer to add more because you know over time it's going to break down during the cooking process as well so just allow that to cook and something i like to do is to make sure i clean off my spatula every once in a while get the rest of the raw meat off of there and continue cooking just make sure everything is breaking up so that it's cooking evenly now we're going to go ahead and add our garlic you know we got to have some garlic in the dish so you're going to add about one to two tablespoons you can never have enough garlic add that mix it all up you can do fresh or minced in the jar and y'all already know i'm gonna do what's quicker because essentially this is a dish that i hope that you will be able to just throw on within 15 to 20 minutes and then just let it cook for the rest of the time being so i'm gonna drain it and then we'll go ahead and add our seasonings first i'm going to add an all-purpose seasoning with crushed red peppers oregano and garlic and i'm also going to add a different one with garlic onion salt and pepper now you are welcome to use each individual seasoning however by me using the blends it just makes it a little bit quicker so we're going to season it up and mix that together now after i mix that around i'm going to go ahead and get ready to add my tomatoes now i'm going to use a 20 ounce large can of diced tomatoes however you're more than welcome to use fresh tomatoes these work just fine use that and we're gonna just mix that all together now that 28 ounce can of tomatoes is about the equivalent of eight to ten fresh tomatoes now we're going to go ahead and add our tomato paste we're going to add about two tablespoons of tomato paste and we're just gonna press that in there you want it to dissolve completely into your chili so just mix it all around all right now i do want to mention that you can add whatever kind of beans you would like to to your chili beans right now i'm going to go ahead and add some kidney beans i love kidney beans in my chili beans and we're gonna go ahead and add that you're more than welcome to add black beans navy beans pinto beans whatever kind of beans you want but in this recipe i'm just adding kidney beans and i'm also gonna add a 28 ounce can of pinto beans in the mild chili sauce so i'm going to add that can of chili beans and mix that all together you will not regret it this recipe is so delicious it has a little kick but we're going to fix that a little later and i'll show you how now you want to make sure that you're stirring from the bottom of the pot you don't want anything to stick and we'll just go ahead and add about a teaspoon more of each seasoning all of the measurements for this recipe are on my website the link is in the description box below and we gotta have that chili powder so for each pound of meat you're gonna use a little under two tablespoons of chili powder you don't want it to be too much add that in there mix everything well now i do want to note that you should have your heat over a medium low heat during this entire time while you're adding all of your ingredients together so medium low at about a three to four no higher than four and just make sure to continuously stir the pot and then we're just going to add a little bit of sugar to balance everything out i'm using some light brown sugar and just a little bit anytime you're making anything acidic like the tomatoes are spicy you want to go ahead and add that just for balance now you're more than welcome to use a broth however i am adding water because all of my seasonings um will have it well seasoned so i'm adding about a cup and a half of water add that in there mix it all together don't worry about if it looks a little watery because we're going to allow this to cook for about an hour to an hour and a half all right so now we're going to add two bay leaves cover that lid and let it cook for a little over an hour and then we're going to continuously stir look at how it looks once we are done y'all so good oh my goodness it's so flavorful well seasoned everything tastes delightful i love to eat it with cornbread or i will scoop out some and place it in the middle of a cornbread bowl it's also delicious if you top it off with some shredded cheese sour cream
