Today we will prepare... "Bolillos". Soft and fluffy inside but
very crunchy outside. And, what else to say... Well, I like to eat with butter,sugar and
Cinnamon. I remember my childhood. Also, the "Molletes"... And something that can't be missed,
"Torta" with Ham... The one that mom always gives
to take to school. I am Rosy. Welcome to "Katastrofa La Cocina". Let's see the recipe. Stay with me. Let's start by adding into a bowl... 10 gr of Dry Yeast ( 3 teaspoon). 340 ml of Warm water (Between 28 to 30 C). Mix and leave to activate the Yeast. When yeast activate, slowly add the Flour. I start by adding 1 Cup. Then, I mix the other part of flour with
2 teaspoon of salt (9 gr). And, continue adding
to the batter. Little by little. Mix. Until dough is form and start to give
resistance to our spatula. Then continue mixing
and adding Flour. But now use your hands. In total, at this point, I add
approximately 450 gr of Flour. Add 2 Tablespoon of Oil. I am using Olive Oil. You can also use
other kind of vegetable oil. Also you can use Melted Butter. Continue mix until combined. Remove from bowl. And knead the dough. Is not necessary to sprinkle flour on table.
When you start knead, dough will be sticky.. But, while you continue kneading
as showing on video, you will notice that this process
will become easier. In my case, was required more flour.
I noticed while was kneading. So I add the remaining Flour here. In total, for this recipe I use 500 gr of
Flour (about 4 Cups of All purpose Flour). Knead until get a shiny dough and when
you stretch it does not split. This process can take between 15, 20 min.
It will depend on you skills for kneading. Now, grease your bowl. Make a ball with dough and
place into the bowl. Brush dough with bit of oil. Cover and let to raise until double in
size. For me, at 23 C takes about 1 1/2 hour
to double in size. If where you live is hot,will take less
time to rise and, if cold will take more. After this time, punch it. Knead the dough for about 2 minutes more. My dough weighted 816 gr. So, I made 8 balls of about 92 to 102 gr. Cut your dough in half... ...and again, until get 8 balls. If you want all have exactly same size,
weight each one in a scale. Now make ball shape to each portion. And place them into a floured surface. When you made all the balls... ...start to make the shape of "Bolillos". Put each Bolillo in your baking tray
with baking paper. Brush each one with little bit of oil
to not dry. Cover and let them to
rise until double in size. For me it took 1 hour. After this time, make a cut in each
one with a sharp knife. I preheat the oven at 225 C from 20 min
before bake and I put baking tray below. Minutes before you put to bake, add 1/2
Cup of water in the tray. Put the Bolillos in Oven and add
1/2 Cup more of water on tray below. Bake from 25 to 30 minutes. First 10 minutes at 225 C, then reduce temperature to 190 C. If your oven heat from above and below,
activate this function after 10 minutes. And leave them from 15 to 20 minutes more
or until they are golden brown. Remove from oven, and you can cover
with a cloth from 5 to 10 minutes. Then, let them to cool down in
