  • Thai Chilies: 6, chopped (adjust for spice tolerance)
  • Fish Sauce: 3 tablespoons + 1 additional tablespoon to taste
  • Green Mango: 1 (or green apple as an alternative)

Instructions

  1. Prepare Dried Shrimp:

    • Powder dried shrimp slightly and set aside.
  2. Cooking the Sauce:

    • Heat medium and add 3 tbsp of water and palm sugar.
    • Wait 2-3 minutes until palm sugar dissolves.
    • Reduce heat to low, add shallots, and cook for 1 minute.
    • Add chili paste and stir.
    • Add powdered dried shrimp.
    • Cook for 3 minutes while stirring.
  3. Adding Spices:

    • Add chopped Thai chilies.
    • Mix in 1 tbsp of chili paste and 3 tbsp of fish sauce. Stir.
    • Cook for 5 more minutes on low heat to thicken the sauce.
    • Taste and adjust seasoning with additional fish sauce if needed.
  4. Finalizing the Sauce:

    • Cook for another 3-4 minutes until it thickens more.
    • Remove from heat and let cool.
  5. Prepare Green Mango:

    • Peel and cut green mango into thin slices for dipping.
    • Note: If green mango is unavailable, green apple can be a good substitute.
