Baked Kibbeh Recipe
Ingredients
Bulgur
1 kilogram of fine bulgur (brown or yellow)
3-3.5 cups of warm water
Meat Filling
2 tablespoons of oil
3 small onions
1 tablespoon of salt
1 kilo of minced lamb or beef
1.5 tablespoon of black pepper
A small handful of walnuts
Dough Preparation
3 small onions
1 tablespoon of salt
½ teaspoon of black pepper
1 tablespoon of cumin
2 tablespoons of butter
1 egg (to hold the meat together)
Black pepper (for sprinkling)
Instructions
Preparing Bulgur
Mix 1 kilogram of fine bulgur with 3-3.5 cups of warm water.
Leave bulgur aside for half an hour.
Preparing the Meat
Heat 2 tablespoons of oil in a pan.
Stir in 3 small onions until wilted.
Add 1 tablespoon of salt.
Add 1 kilo of minced lamb or beef and 1.5 tablespoons of black pepper.
Crush a small handful of walnuts and add them to the pan.
Stir occasionally and cook for about 5 minutes.
Set aside to cool.
Preparing the Dough
Grind the soaked bulgur twice.
Add 3 small onions, 1 tablespoon of salt, ½ teaspoon of black pepper, and 1 tablespoon of cumin.
Put the bulgur into the grinder little by little until it forms a cohesive dough.
Divide the dough into two parts.
Assembling Kibbeh
Flatten each dough part using a grinder.
Spread 2 tablespoons of butter on the tray.
Place the first part of the dough on the buttered tray and moisten with a little water while spreading.
Remove any excess dough with a spoon or knife.
Spread the cold meat mixture over the first dough layer, leaving 1 cm from the edges.
Place the second part of the dough on top, stretching and pressing lightly.
Slice the kibbeh as desired.
Pour melted butter over the top.
Baking
Bake in the oven at 180°C for an hour and a half.
Serve and enjoy!
