okay here we go we're live Wonderful well welcome everyone we're so glad that you've been able to join our live if you're new to me new meeting me my name is Mary bran Shrader I'm the author of the modern pioneer cookbook and the modern pioneer pantry and I'd like to welcome you to my kitchen here at Mary's nest and we're very excited today to be honored to have Dr William Davis MD join us to talk talk about El rudai if you're new to Dr Davis he's the number one New York Times best-selling author of the Wheat Belly series of books and one of my favorite books super gut this is a wonderful book and if you've not seen the subtitle I absolutely love this a four-week plan to restore your microbiome restore health and lose weight you can't ask for more than that also I'm just going to read this so I get it perfect Dr Davis is also the chief medical officer at realized Therapeutics Corp which was he co-founded to explore the new science of the microbiome to improve health and appearance including skin health and body composition and realize Therapeutics offers my rudai which we're going to talk about today this is for making the El rudai what we lovingly call Super yogurt and to yes for those of you who ask this live stream will be available on replay well thank you Dr Davis for joining us we're so honored to have you here well thank you Mary I've been meaning to meet you you've been doing such a fantastic job in talk about rotay and spreading the word oh thank you I I this has been such a wonderful learning experience for me when I discovered you and I discovered super gut and I started making El rudai I knew that this was something that I wanted to share with my viewers on YouTube and it's been such a delight making it both in a yogurt maker and in the instant pot now I've not tried the Su yet but I know that that's your area of expertise but I thought for those of you for those who here who are new to all of this uh we have some viewers who are very experienced at making the El rudai and we have others who are sort of just kind of tipping their toe so to speak into the Waters of the El rudai experience and so I thought it would be nice for you to share a little bit about uh your journey with El rudai and uh how you came to discover this and start making it and why it's so good for us you know may it started a number of years ago when for one reason or another I don't recall exactly why I was thinking about the hormone oxytocin so a lot of people know what that is it's the hormone a woman is given to to accelerate delivery of a child right it's also the hormon of love and empathy but there was this very peculiar series of experiments conducted at Stanford and Harvard where they this is kind of creepy this like Frankenstein stuff they took a an old rat cloned it so that you had a young rat that was genetically immunologically identical and then very creepy they connected their circulatory systems lo and behold the old rat becomes young what in the world this called heterochronic parabiosis oh my gosh well they asked what are the mediators what are the mediators of restored youthfulness and there's this is a work in progress they're still working on it the first thing they identified was oxytocin and it becomes clear it's a hormone we lose as we age it drops dramatically and then an MIT cancer group Massachusetts Institute technology uh they were looking for the anti-cancer effects of lactobacillus rori so unrelated work different work and they gave these mice rorai and they saw effects they did not expect in addition to the cancer anti-cancer effects they saw the mice maintain main youthfulness for a lifetime wow they saw them Grow Rich thick fur their healing time from wounds was cut in half their uh hormone levels like growth hormone testosterone went through the roof um they they did they were impervious to all the adverse effects of fast food I mean unexpected stuff well I got that same microbe and it was surprisingly at the time commercially available and tablets for babies the dose was really small so you could take the entire bottle of hard tablets which is unrealistic right it had sugar in it had some other garbage in it so I reasoned how do we increase the microbes count so I thought let's let's try to make it as something that looks and smells like y it's not yogurt of course right yogurt something entirely different but it looks and smells like yogurt conventional yogurt you buy in the store make it home really doesn't do that much it's it's it's fun eat put some chia seeds in it but but it doesn't really change your life right you don't say I went to the store ate yogurt and changed my life no it doesn't happen so but I use this rationale we know that lactal Basil's rorai doubles they don't have sex right there's no male and female microbes they just double themselves well Rite doubles every three hours or so at human body temperature so rather than do like they do in commercial production of yogurt where they let it ferment for 6 hours maybe 12 hours hours we're going to let it ferment 36 hours to get to double 12 times and you get a rich thick as you know very uh Rich end result I perform flow cytometry on multiple batches to count the microbes and we get around 300 billion per half cup or 120 milliliters serving so what we're doing is increasing the counts about a thousandfold from the original product and then you know this doesn't happen often Mary where things AFF scene in mice often don't translate to humans right this case to to my great surprise and Delight everything seen in mice so far has been either seen anecdotally or corroborated forly in humans all the things we're seeing in mice seem to translate into humans the increase in dermal collagen that's what ladies love because they start to lose their wrinkles there's a restoration of youthful musculature men over 50 experience about a 50% rise in testosterone older women experience an increase in vaginal moisture and sensation there's an increase in libido now think about that Mary youthful muscle libido uh moisturization smoother skin I think return the clock back 10 or 20 years and Mary that's one microbe I just happen to choose one that has probably among the most most fantastic effects on human health and and aging well you know that's fascinating what you said when they were doing the studies with the initial rat and the coat of the fur became thicker I will tell you that back in 20120 uh you know with that virus that was just plaguing all of us and I was able to avoid that but then at the very end of 2021 I got sick with that and my hair really thinned you heard a lot of people talking about that and when I eventually discovered you started making El rudai I noticed that my hair improved and places where I had like thin little bald spots almost it started to grow back and now I have like three or four inches of new hair it looks a little funny because I've got like all these little spurts coming out but I'm so happy for it and something that I find fascinating uh when you have taught us how to make el rudai is that you recommend using half and half and I really like that you tell us you know not to be afraid of good fats because fats have been so maligned the good fats and then we've you know spent years eating all of these seed oils that have been no good for us and people now are coming back to wanting to eat the good fats and so there's nothing as luscious as El rudai made with half and half and I and it's it's it's just a delicious uh cultured Dairy of all of the cultured dairies you know Under the Umbrella uh whether it's yogurt you know the traditional uh actual yogurt or kefir cfir depending on how people say it there's something very special about the texture and the taste of el rudai and something that many people have been very interested in is I know you started making this with uh a different brand of el rudai tablets that we would crush and mix in with the half and half and some inin but now you've created this my rudai and I would love to hear your thoughts on uh how you came to create this and the success that you've had in making your own El rudai culture Dairy using this you know Mary when we choose a microbe we screen it for all the necessary characteristics so in this case we want to make sure the strain because there are differences among strains not always but sometimes in this case we wanted a rori that colonize the small intestine that's part of the magic here Mary most microbes probiotic species uh colonize the colon but roai colonized the entire 24 feet of small intestine and the colon and by the way the mouth also and the vagina and many other places so it's a very unique organism now when it takes up residance in small intestine it also produces what are called bacteria sinins these are natural antibiotics that kill invading feal microb that sounds weird but half the US population right half the US population has for a variety of reasons like exposure antibiotics and other things have allowed the over proliferation of fecal micro eoli salmonella Campo factor pomonis to overpopulate in the colon and then Ascend into the 24 feet of small intestine small intestinal bacterial over we say sibo sio yes well I think that so rorai incredibly merry has been lost by nearly everybody it's ubiquitous in Wild mammals so if we were to examine the of a deer or a moose or raccoon they all have roite if we examine the stool of Hunter gather of populations like the Yanomami in the Brazilian Rainforest or inhabitants of the highlands of New Guinea or the uh savan tribes of Africa they all have Rai we've lost it because it's very susceptible to Common antibiotics and so restoring this microbe yields all these huge outsized effects and by making yogurt you're kind of stacking the odds and favor of having a big biological effect you know if you have trillions of microbes 50% of population has this I think it's worse than that to be honest but if half the population has the invasion of FAL microbes in the small intestine trillions of them how do you overpower them well taking a probiotic ain't going to do it numbers are so small and most those species in commercial probotics don't take up residance in the small intestine and don't produce bacteria so I chose Ro I choose strains of Rite that have all the characteristics we want we've studied in animals we studied in humans we're doing more studies with it and one of the things we're trying to do long-term area is trying to see if we can improve on the effects there's about 200 strains of Rite we're not we're not the pharmaceutical industry we don't have billions of dollars that from ripping people off we don't we don't do that right so we have a few hundred thousand dollars for every clinical study it's a little bit rough to do that but we do it and we're having a new study about to start in a few weeks uh because one of the things I'm exploring also is we did our first clinical trial small trial 25 ladies and I asked them don't change your diet don't change your exercise program just get the rotay and I threw in some other things this was a skin trial Mary looking at Chang skin so I to stack the odds in favor of a positive response the ladies took Rite 40 billion counts with collagen peptides Marine Source collagen peptides hyaluronic acid and the choid acid anth because these have all been shown to have individually beneficial skin effects so they take it for 90 days we do methods like highresolution skin ultrasound to measure dermal thickness and we get very large increase in dermal thickness because of dermac collagen ladies were thrilled because their crows feet and some of the smile Lin started to recede even some of the nasal laal fold and farhead wrinkles started to seed but here's the thing we also happen to measure waste circumference because it's free it's easy tap measure right and to my great surprise we had extraordinary reductions in Waist circumference on average of three inches as much as 8 and a half inches huge diet nothing but they didn't lose weight so consistent with the anal evidence and consist what we're seeing in real life increase muscle Now ladies say we know I don't want muscle yeah you do want muscle because as you age you lose about a third of your muscle and if you made the mistake of losing weight like on a go Agonist or calorie reduced diet or Worse bariatric procedure you lost a huge amount of muscle when you lose muscle by cutting calories regardless of the method you've accelerated your path The Falls fractures Frailty loss of Independence and early death by several years now so here we stumble on a way Mary to maintain or restore youthful musculature personally when I started doing this years ago in my early 60s this was like five years ago I gained 13 pounds of muscle over three weeks my strength increased by 50% so I think what we stumbled on in a skin clinical trial Mary is a way to modify to restore what I call shape and body composition getting the exact opposite of say these gp1 Agonist drugs where you lose huge amounts of muscle that guarantee weight regain when you stop the drug and it ensures earlier death Mar I'm think how profound so we've stumbled on something that achieves the opposite you'll see that you'll have smoother skin you'll say you may say you know what uh I I gained eight eight pounds people get mad at me they say I gained eight pounds on the rotay I say that's good did you look in the mirror and they say well yeah my waist is smaller my shoulders are firmer my thighs are firmer my buttocks are firmer well so we're restoring youthful musculature this is a great thing uh restoration youthful muscle is a huge Health Advantage long term well that's fascinating and you mention this uh you have gut to Glow which is a nice companion with the my rudai so you make so do you recommend making the myud rudai or making the El rudai with my rudai and then also taking this gut to Glow which uh has the ingredients you were just talking about the Marine collagen and the hyaluronic acid and so on and so forth you know I did that for convenience Mary so my audience I'm sure yours is likewise it's mostly female yes and they say I'm sick and tired of making the yogurt okay it's easy but okay all right fine or I'm GNA be traveling I don't want to bring a yogurt maker with me or some other reason like that and so I said okay so I formulated this thing so that it was convenient but both products can be used to make the yogurt the only weird thing is if you make it with the gut to Glow because there's a carotenoid asto zantin like beta cartine yes it will color the first batch like pink it won't hurt anything H if you make your future batches from a little of the prior batch and of course that's the magic of this right you only have to buy your product once and then you can propagate it just like he would in conventional yogurt making but you know we should make that point that this this is not yogurt the stuff in the store uses different microbes like lactobacilus bulgarus streptococus thermophilus these are not very interesting that's why no one's had a life-changing event or or change with with conventional yogurt and the number of microbes is very low and we're gonna ferment with human microbes you know I was in a beer um one of these Brewing stores I wanted some venting caps because we make fermented juices also and it makes huge amounts of carbon dioxide and you want to vent that carbon dioxide so so your container doesn't explode right right right the beer making guys help very helpful guys they ferment a lot of stuff but they're fermenting Beer and Ale and wine and they use these microbes like sacris Ser VCA and lactobac breev things like that and they said what are you doing I said well we are fermenting human microbes like what and it struck me how unique what it is what we're doing we are fermenting human microbes it could be lactobacilus Rite it could be lactobacilus gaseri could be bif bacteria infantis it could be basilis coagulant basilis suus there's a whole range of interesting microbes to play with many of which we've lost so you can restore some and get some extraordinary beneficial effects that's fascinating well you know it's interesting in talking about making the El rudai cultured Dairy you mentioned that you can get your capsules make your one batch and then use your first batch to make your second batch use your second batch to make your third batch and so on and so forth I know a lot of viewers and I experience this also when I make my first batch it's sometimes like chunky there's sort of curds and way and is it I know a lot of people will ask me is it okay to consume do do you just mix it up and eat it like that and then going forward save a little and make the second batch and I often find my second batch comes a lot creamier and smoother we call that the first batch effect and it's presumably due to kind of Awakening the microbes when you get the microbes as a as a product like my rorai or other source they've been lyophilized that is freeze dried at a very low temperature and so they're very they're quiescent so the first batch I think we're kind of Reawakening their metabolic Machinery now you can either mix it I like to pour it off because the whe is one thing that has some problems it has what's called an insulinotropic effect it causes a boost in insulin which can cause weight gains in some people so I heard that yes I've heard that or pour it off pour the Whey liquid off and freeze it as ice cubes and a lot of people in my audience will use that as their starter they use two cubes to start the next batch so so it doesn't go to waste oh I like that now one of the great things about this method we use of prolonged fermentation is dairy has issues we know that but you minimize them by this method because you're going to maximally convert lactose to lactic acid that's why it's tart it reduced the pH lactic acid reduced the pH to a very acidic 3.5 tfold more acidic than conventional yogurt and when you achieve that level of acidity it denatures or breaks down the casine beta A1 that's the form of casine in North America that some people have an issue with minimize lactose lactose intolerant people almost always can eat the yogurt made this way and you've minimized the potential immunogenic phenomena of casing beta A1 and if you pour off the way or save it as cube ice cubes you've eliminated that insin insulin provoking effect and of course it it's tasty now the cool thing Mary is you make yogurt with one species or other they all have different flavor profiles really interesting so you can almost tell we could do a blind taste test and Mary says oh yeah that's ruy that's lactobacilus brevis that's B bacteria longum it's a it's a whole variety of things we can do that's fascinating and now you know a lot of people will ask me what do you recommend as for daily consumption how much of the El ruai cultured Dairy should someone eat on a daily basis it depends on what you're trying to achieve so if you just want some of the skin benefits the immune boost boosting effects increase libido uh all the a half cup a day providing 300 billion you know if we wanted to provide 300 billion microbes in capsule form it would be extremely expensive yes so I I I'm in conversations all the time with microb with micro manufacturers these are big big companies with 60 foot stainless steel Vats things we wouldn't do in in our house yeah and it's very expensive on the order of thousands of per kilogram and so if we want to make a capsulate provided 300 billion it could be done but it would be really expensive so taking the yogurt to achieve counts like 300 billion is a very lowcost workaround to give you big counts so if you just want better skin all those kinds of things um uh a half cup per day is more than enough you could even spread it out over time because ride does take up temporary residence for a couple of day few days you could do it every other day or something like that now the one exception to that is if you're starting out with a really bad case of colonic disbiosis or sibo let's say you have multiple food intolerances I can't eat nit Shades histamin containing foods F Babs you you know these people I can seven foods yeso or if you have a condition that's essentially synonymous with sibo fibromyalgia is sibo R's leg syndrome that's sibo people who have type 2 diabetes obesity an autoimmune condition or neurod degenerative condition sleep apnea on these are the incidence of uh sibo so high you can safely assume that you've got sibo now what if we said Mary what if we said all right you think you have sibo well first of all don't ask the doctor the doctor will say oh Mary you've been Consulting Dr Google again haven't you or there's nothing wrong with you it's in your head don't waste my time that's how my colleagues react right for the most part I'm generalizing of course but what if a solution for sibo and all the problems associated with it depression anxiety cognitive impairment rosacea sises weight gain abdominal fat on what if the solution was surgical removal of your small intestine that ruins your life well you better be damn confident that's really necessary right what if the solution is something that looks and smells like yogurt that you make in your kitchen and gives you smoother skin youthful musculature improve libido makes you nicer to other people increases love and affection increases gener you don't have to be so confident that you have it or not so well I I one regret I have Mary is so one of the things we do as you know is is what I call sibo Yogurt it's our friend lacil ruai lacil gasty the original formulation included basilis coagulans I've since switched the basilis sutus coagulant is hard to ferment sutus much easier and so far we've had huge success far more than I ever expected in getting rid of sibo by eating a yogurt now you have to take it for a minimum of four weeks every day half cup every day because the advantage of the yogurt is massive amplification of bacterial numbers so that's where I wouldn't use the capsules alone i' use the capsules to make the yogurt and then use the yogurt and then use your judgment if you have really bad sibo like you say I took antibiotics for four years for acne or whatever you may want to do it for eight weeks and but most people four weeks and then consume intermittently like maybe three times a week or so for the rest of your life until we figure out how to make these microbes take up permanent residence right now no one knows how to do that it's probably a matter of what's called Community or Guild or consorti that is microbes are like us you have a partner you have children you have family you have co-workers neighbors Community microbes are the same and they need their Community to survive long term we don't yet know for instance what the community is for Rai maybe in a few years we'll know but right now we just don't know that so you consume it long term so it's a little bit of hassle you as you know it's minimal hassle really make oh it's minimal yeah it's it's easy to make and you just develop a routine and it's so nice because you're just saving some of what you made and I usually find that uh I'll make like a 10day supply and then save a little bit from my last little jar and start my new batch and it it's just routine you know many of of the folks watching today have what we call traditional foods kitchens we're making our ferments we're making our bone broth and we're just making our cult Dairy we're making our El rudai you know it's just part of the rhythm of our traditional foods kitchens but you raised a very interesting point when you were talking about sibo and you mentioned the and forgive me if I pronounce it wrong but the El G Gast I'm not sure what the other probiotic was that you mentioned and I do get a lot of questions about that about mixing another probiotic with the El rudai and do you recommend that and obviously for the sibo you do and do you recommend adding in any other probiotics or do you not want to dilute too much the effect of the El rudai so we know that the original formulation rotay gaseri and basilis coagulant we know that works we've had 90% success in eradicating sibo as as measured by this device Mary uh it's called the air device Air the original that measures High hydrogen gas this is the more recent one hydrogen gas and methane you blow into it talks to your smartphone 0 to 10 and it tells you whether you're producing hydrogen gas because your human physiology can't produce hydrogen gas but microbes do so there's a whole process to do this there's there's a dietary prep and then we consume then you do a baseline measure should be low like 1.2 then you consume something that microbes can metabolize I use inulin which is better than what they do in and Clinics they use lactulose we use inulin better because more microbes can consume it you consume it like maybe two teaspoon in your coffee or other food you can eat the rest of your breakfast too and then test every 30 to 45 minutes for about 90 minutes and if it goes up more than four units let's say next measurement at 45 minutes is 9.8 more than four it's positive you now know microbes are living in your in your upper GI tract in your small intestine duodenum gum Ilium tells you you have sibo because it takes at least at least 90 minutes or longer for that inulin to reach the colon where hydrogen gas production is expected and normal so if it it's produced at 30 minutes or 45 minutes or 60 Minutes you know those microbes are living way up high and so far the original formulation co-fermented all three works but I think you can improve on it by because as you point out we don't really know what Happ happens when you grow all three and make repeated batches so I was submit like some from the fifth batch and 10th batch to see what's the relative numbers if it starts out a third a third a third what happens by batch 10 is it 90% of one 10% of we don't know to be honest we didn't submit it because the testing was so expensive it's $2,000 per batch wow so we will because it requires DNA sequencing don't know so the workaround the best to do this is to individually ferment them and consume a little of each that's the best now the one thing so I replace the basilis coagulants because not reliable we're getting wild variation in numbers it's still a really cool organism to ferment other things for in for for thing it's a really great way to reduce muscle injury during strenuous exercise so it's a real great Advantage for athletes I I have a pro tennis player daughter and uh she'll have to play uh around three hours in the hot sun if she wins she got to play again tomorrow often where your Sor is heck well so I have her take Basil's quiet L to reduce muscle injury so she recovers faster but despite all that I replace it with basilis suus it looks likeus because so we want microbes that inhabit the small intestine and produce bacteria one of the one of the problems one of the limitations of the Rai and the the gaseri is it produces bacteria mostly effective in killing what are called gram negative species eoli and salmonella but the subus produces bacteria is effective against both gram negative and gram positives like staf cacus strepto cacus ericus some people have sibo and it's dominant with those gr positives and so the addition of the basilla suus I think is a great advantage and it has all kinds of wonderful effects all of its own also shrinks your waist for instance reduces inflammation uh now two ways to do it we you can I like to make it as a sparkling juice delicious it's like a it's like if I get like mango passion fruit juice and it turns you get mango passion fruit soda ah almost no sugar in it so real easy way to do this if you have an Aldi or a Costco near you look for the brands of Kombucha it's not kombucha but they label it kombucha has the micro b still subt as in so Aldi it's $219 Mary wow take a quar half cup of that pour it into your choice of juice just make sure there's no preservatives because microbial make sure there's no potassium sorbate or sodium benzoate or anything like that cap it agitate a little bit loosen cap and then we ferment at 90 degrees Fahrenheit for about 60 hours or longer taste it if if it's sweet let it go another 12 24 hours we don't want sugar right we want this we want to get rid of the sugar and then you consume it and it has huge benefits now if you don't want to make the juice there's another strain of basilla suet it's called hu58 and you can get it from microbiome Labs that's that's um the company sted by my friend Dr Kieran Krishnan you can ferment that as yogurt makes it delicious yogurt and so you have some options here but the best way if if you got sibo bad which can be very serious Mary andal Solutions are awful so here you have a fantastic solution but the stack the odds in favor of a f of a positive result individually ferment consume each maybe maybe a quarter cup or a little more of each uh and then either use the yogurt or the sparkling juice for the basilla sutus oh that's an excellent plan I'm going to look for that next time I'm at Costco and start experimenting with that that sounds wonderful a question that one of the viewers today wants to know is in super gut you have recommended adding collagen hydrates and creatine uh to increase muscle strength when making El rudai is that something they're wondering if that's something you still recommend you I sh I changed it a little bit in light of what we saw in our clinical trials and other people's science also so if the key here is to restore youthful musculature for one never cut calories never cut calories for any length of time so I like hearing that so Tim restricted eating that's okay that's compressing your eating time to like eight hours or that's okay uh intermittent fasting is okay but you never want to exceed about 48 72 hours because after that you lose muscle and it's very difficult to regain muscle once you've lost it so what can you and I do to restore youthful musculature so firmer neck shoulders arms thighs buttocks and makes you able to bound upstairs I'm G to be 68 this in a couple of months I go upstairs two at a time no problem uh you know you and I want to ride our bikes and go climbing and go do all the things that you've been doing all your life you want to be doing that till you're whatever 98 so part of the solution is to restore or maintain youthful musculature rori big effect collagen peptides and hyaluronic acid now people often think I'm just throwing random supplements at no no no no no because of the huge mistake they made in dietary guidelines where they said cut your saturated fat cut your cholesterol right eat more healthy whole grains big mistake one of the things that resulted from that was people abandoned consumption of organ Meats tongue heart stomach intestine and those are foods rich in collagen and hyaluronic acid so those are two very important body shape compon factors in your diet collagen we know reduces abdominal fat restores youthful musculature you know Mary hyaluronic acid ladies always say oh don't tell me about hyaluronic acid I know all about it because I buy a very expensive serum and I put it right here and and they pay a lot of money for it say okay you apply it right there to your crow's feet what did it do for your neck skin or your abdomen or your th nothing it's local and temporary the real magic of hyaluronic acid is ingested orally it's a fiber Mary it's one of the very few fibers sourced from animals and it's lost in the modern diet so we restore the hyaluronic acid and it does all kinds of wonderful things one it's a fiber so it blooms beneficial species in your gastrointestinal microbiome species like acroman and F calcum very powerful oh yes it also adds to dermal collagen and dermal moisture it gives that plumpness that ladies love that you that young ladies have it restores that it also increases collagen in your joints joint cartilage it increases the lubricant the synovial fluid in your hips and knees it restores the glycocalix in your arteries little finger-like projections in all arteries that controlled tone of arteries it adds the hyaluronic acid of your brain and uh the uterus cervix and vagina are largely hyaluronic acid and there's none in your diet so we're going to add it and you get a moisturization effect there also important for ladies over 65 yes that's very important uh we have a very interesting question from some uh who is asking that over time in the event that there could be an overgrowth of other microbes in your that may have developed over time as you're making your El rudai yogurt or your El rudai cultured Dairy do you ever recommend restarting occasionally and just starting a new batch with a new capsule and then working from there or is that not a concern well think about this if I plant seeds for tomato in my backyard garden what's the likelihood I get cucumbers zero right right so when you plant something you get the same thing back now the problem is is if you have contamination now that contamination can come through your your tensils so we're seeing for instance that people who use let's say a spatula that has a plastic handle and a silicone or rubber blade well that where where the two connect can be a source of microbes ah interesting or a stick blender has that blade that's in the little cup that's really hard to clean that can be a source of contamination and more recently I was talking to one of my friends Dr David worthin he's a scientist in Rhode Island he says you know Bill the inulin is not sterile I said oh he's right so I got what's called certificate of analyses on multiple brands of inulin and lo and behold Mary yep they all do testing for microb contamination and there's almost nothing of the bad microbes except for basilis species Bas serious these are spor forming microbes that are everywhere they're in your hair they're in your spoons your bowls and your kitchen counter they're really tough to kill because they are resistant to chlorine to ultraviolet radiation to baking to Boiling so almost all these inulin products had less than 900 100 cfus counts of microbes per gram so if we're consuming 120 grams or so you you see there's a lot of opportunity for contamination so I found a source of inulin that was sterile and I confirmed it we sub resubmitted for testing it is indeed sterile so we're going to get that that out to people I hope within a couple of few weeks sterile inulin so it looks as if the Prebiotic fibers we use sometimes can be a source of contamination but the the microb cell ride will continue forever unless a contaminant enters another source of contamination are fungi in the air and you can see that on the surface is orange pink green or black discoloration now that's easy just scre scrape it off toss it you can still eat the yogurt but then look why that happened most common cause is you made your yogurt in the path of air flow from your air conditioner or your heater or some ladies have said they use diffusers that was another source so uh the microb itself does fine it's the contaminants that get in the way and you'll recognize that the most common thing is to get this kind of foul smelling thing that separates grotesquely throw it away don't eat it start over again and think where' that contamination come from and look at all you all the things you've been using oh that's fascinating to know I'm so excited about this inin product that you're mentioning and I'm going to be anxious to try that and make it with the the uh my rudai I think it's going to really create a wonderful uh product or culture Dairy you know at the at during the culturing process you know this is kind of a cute question that someone asked and I'm wondering if and this is for all the dog lovers out there people want to know if they should be giving some of this to their dogs or is it like you mentioned with animals in general they already have the El Ruder well you know we could find out by testing them but most people want to spend two to two to seven dog stool and most dogs have not been exposed to rotay I'm sorry to antibiotics but I will tell you I'm not a veterinarian I'm not an animal expert but I will tell you lots of people have done that and they've reported very positive results in texture of their fur and uh and mood and behavior it seems to improve their behavior kind of exactly paralleled to what experience we should talk about that so we've talked about how rorai colonized the small intestine and produces bacteria a huge advantage in health but it also if we believe the animal evidence we we've been struggling to reproduce this in humans we' we're on a third try to do it the method of measuring oxytocin is very fussy it's called an Eliza an enzyme link sorbon assay so we're about to launch another Tri do it again with a different laboratory different method um but if we believe the anual evidence that so far has held true in everything else in humans there's a marked increase in the hormone oxytocin that's so interesting because I call oxytocin yes hormone of love and empathy but also a hormone of of shape and body composition because it's the oxytocin that is responsible for the increased musculature for loss of abdominal fat it also you may have noticed this a reduction in appetite that you can Coast through your day and while other people they have their breakfast at 7 they're hungry at 9 have a snack they hungry at 11 have a snack have lunch at 12 hungry at 2 the incessant hunger uh that gets turned off and even more so as you know my book from 14 years ago is wheat belly yes one of the things we do is eliminate wheat and Grains because it's the gadin derived opioid peptides that are major appetite stimulant so the combination of getting rid of gin derived opioid peptide appetite stimulants the appetite suppression of rotay via oxytocin and we don't restrict fats as you know uh the idea of restricting saturated fats and total fat is nonsense there never was evidence to support that as a way to reduce cardiovascular risk this is why I love you doctor so people say I had you know I don't I'm not hungry in the morning I I eat something around 10 or 11 and then I might eat something at three or four and that's it and hunger feels different Mary it's not it's not that that uh intense you know I must eat something it's like a is it time to eat I guess I should have something so you've you're you've given back control you get you get control back over appetite and impulse and it makes it so easy to manage your your your diet oh that's wonderful to hear yes I I so I am just so happy when I hear you talk about the benefits of consuming saturated fat because I am a big fan of that and I love love going and buying my half and half to make the El rudai it's just you you've given permission to so many of us to just really embrace the saturated fat and to to not uh uh buy into all of the things that I guess started maybe in the 80s of all this lowfat nonsense and then eating these really high carbohydrate diets when all of the carbohydrate Foods also were being prepared improperly you know it's uh no one was soaking no one was sprouting you know people were buying all these commercially made uh Breads and at the grocery store in the plastic sleeve and I'll never forget my mother God bless her she lived to be almost 99 years old and she loved your El rudai by the way when I shared some with her but she was so cute because she'd look at the package of the bread at the grocery store with all these ingredients and then she'd say what the heck or do conditioners why are we conditioning dough but we have a wonderful question here and this is something with your medical expertise uh you may be comfortable answering uh someone wants to know if taking El Rudi you mentioned the sibo uh if taking El ruteri would help Crohn's disease uh it will but it's an incomplete solution Crohn's disease means you have flagrant rip roaring sibo terribly and you've got major damage to your ilium that's the most common location of of Crohn's disease so you got to take a much more comprehensive approach things like eliminate things that irritate the gastrointestinal tract so you have to filter your water avoid sources of glyphosate and other herbicides or by only organic I would go wheat and grainfree because there are multiple bowel toxins like wheat germal glutenin and gliadin in wheat and related grains um avoid process Ultra processed foods because they have emulsifying agents that disperse your mucus barrier they have preservatives that are antimicrobial and add to the destruction of your microbiome the whole list by the way is my super gut book but it's just cleaning up your diet in a nutshell real food just eat real food yes I so agree with you eat real food and read super gut this is really one of my favorite books I'm I'm so intrigued by gut health because the gut brain connection the gut heart connection just the the whole body if our gut is healthy it makes all the difference in the world and and you've discussed this today not just with the physical but with the mental as well you feel better psychologically I really have found that over the years and my mother was such a proponent of gut health she was of Northern Italian Heritage and she would say oh my my gosh the United States is so worried about and you as a cardiologist can really appreciate this doctor she'd say oh everybody's worried about heart health she goes worry about your gut health good point true you know we have to worry about our gut health because our gut will take care of our heart and our brain we have another interesting uh question and this I know that uh you have talked about in the past people who are lactose intolerant are they want to make elarai but they'd like to make it with a coconut cream or a half coconut milk half coconut cream whatever combination you think is appropriate and what do your thoughts on that perfectly fine we've we've actually counted the microbes when made with coconut milk or cream and you get at least the same number 300 plus billion per half cup serving but the only caveat is got to buy a coconut milk can not the LI not the stuff in the carton and make sure there's no additives yes bar gum is okay but not gelin gum zanon gum or anything else uh then you want to preheat 180 degrees Fahrenheit there's a rare microbe in coconut that sometimes can be dangerous preheat the 180 degrees for a couple of minutes let it cool back down to 100 then add your microbe your um uh we had guar gum about a GU gum and then hit it with your stick blender for at least a minute till it's nice and thick the reason for adding the guar gum and the stick BL I should say add the microb after the stick blender because the stick blender microbes yes they wouldn't be happy the reason for those additional steps is coconut milk likes to separate and it'll be inedible you want to inhibit separation so the addition of the guar gum stick blender then add microbe that that works pretty well oh that's interesting to know now as people start using myai to make their uh cultured Dairy do you recommend keeping this in the refrigerator or the freezer or can it just be kept at room temperature either way just don't let it sit in hot sun or something like that uh there's a little bit Improvement in survivability in a refrigerator but it's it's small so you don't really have to do that most microbes do not need to be refrigerated the last a good year to two years now you mentioned about freezing the way which was fascinating uh to so that you have this sort of almost like a safety net or a backup for making future batches of the El rudai do you also recommend that once you have some cultured Dairy if you want to freeze that as well in addition to any way uh does it survive well in the freezer and can it be used to uh make a batch if for example you're going on vacation and you just want to take a break and because of my rule rule is I tend to like to use up my El rudai that I've made that's in my refrigerator within 10 days because I feel it's the most um powerful during that period and but say I'm leaving town and I wna I have you know a couple of ounces can I put that in the freezer and then at some point in the future start a new batch you know the microbes are very tolerant to to cooling to Refrigeration or freezing so when we get a microbe from the manufacturer it's been freeze dried yes you mentioned that viable uhuh they don't tolerate heat though so Rite tends to die starting around 110 116 de somewhere around there uh so we don't want to get o Overexposed the Heat and the crazy thing about microbes is their heat tolerance varies so for instance basilla coagulant is perfectly fine at 120 degrees but there are microbes that die at 100 degrees so they you that's why in super god I laid out the the recipe for each different microbe yes but it's very doable but they're all very freezer friendly oh that's good to know uh because it's I I really learned something from you today about saving the way I love that tip that because I am very much a no waste kitchen and so the fact that I can strain off some of the way to lower the insulin effect which I'm 67 7 years old and I think so many of us even if we're not pre-diabetic and even if we're not diabetic we are conscious about not creating an insulin effect in our bodies so I like the idea of draining off the way and then keeping that to make future batches well this has just been such a joy having you with us today Dr Davis I hope that you will come back and visit but can you please tell everyone where they can find more information about you do you have more wonderful books coming out soon and anything else that you wouldd like to share with us we'd love to know so most of these recipes are in the Super
